Drying Kamias for Future Use

Kamias (Averrhoa bilimbi) is one of the most common backyard trees in the Philippines. They are easy to grow and needs virtually no care. The plump fruits come in bunches when in season. The tree is even regarded as having many medicinal uses.

The sour fruit is mostly used for cooking. Most households use it as the souring ingredient in paksiw and is an integral part of sinaing na tulingan. I always liked the kamias with ginataang tambakol or tilapia (fish cooked in coconut milk) but sometimes this fruit is hard to find during the offseason.
Some entrepreneurial individuals though have figured a way to save them for later use. I chanced upon a couple who were drying kamias during my recent visit to Tanauan, Batangas along the lakeshore. The couple neatly arranged the fruits on used cartons and simply exposed directly under the sunlight to dry for about three days. It may be longer depending on the intensity of the sun. The couple sells the dried fruits in retail at about P10 per pack and they say that a kilo fetches a good sum pf P200. Not bad at all.
The craving for a delicious ginataang tambakol or tilapia with the dried kamias will have to come later. Yummy.
